A perfect cured meat to compliment the most luxurious of charcuterie platters. The fat of this ham gives it a beautiful creamy flavour, together with the red wine notes taken from the process we use of bathing the ham in wine of the Troodos Mountains for over a week to take on its lovely flavour. Spiced in a unique seed found on the Turpentine tree of Cyprus. Known as ‘Tremithia’ this seed is blended into a paste and liberally coated to give a nutty flavour with a back note of heat. Oak smoked in our walk in converted grain silo smokehouse and cased within a natural beef casing where it is left to age in our ageing room for 3-4 months. Capocollo or Coppa as it is known by our Italian counterparts is made using the shoulder of pork which we believe is the by far the best cut! 

A shelf stable product meaning there's no refrigeration required.
