Roka Cheese sticks are still baked following the original recipe which was created in 1949 in the Roodenrijs patisserie shop in Delft. The cheese sticks are baked from the same refined puff-pastry (90 layers) and over 30% carefully matured old Gouda cheese, as the cheese crispies. However, the pastry is cut in a different way, resulting in a different shape and bite.
